The Phantom Pig fine dining experience: six courses, mystery snacks and a tipple.

We are in the height of summer and July’s menu reflects that with seasonal ingredients and sense of fun; making the most of the whimsical British summer! Mind you Chef Vix and his team are bankers when it comes to their flavours and ability to tantalise and titilate our tastebuds!

The Fens, Marshes, Hedgerows, Allotments and Orchards all make an appearance in what promises to be a superlative menu. If you only manage one pop up fine dining experience this year, make it this one – you won’t be disappointed: it’ll be full of flavour and the presentation a vision; I think you could be forgiven if you paraphrase a well known saying about pictures painting a thousand words and substitute one form of visual art for another!

The feedback we received about the wine pairing was very encouraging: so we are collaborating with Abbotshill once again to offer you a completely rounded fine dining experience. The pairings list will be released shortly.

Mystery Snacks

Wine: Carpe Diem White 2014 from Knightor, Cornwall.

Tasting Notes: delicate fresh fruit and floral hedgerow characters on the nose. On the palate it is dry and crisp giving generous citrus flavours and excellent purity.

Winemaker’s Notes: All grapes were picked by hand and fermented cool, in stainless steel tanks to preserve freshness and fruit characters. 2 months after harvest Knightor’s winemakers chose only the best and most expressive 2014 white varietals to come up with this early release blend.

Wine: Rias Biaxas Albarino “Mar de Frades” blue bottle, Spain 2015

Tasting Notes: The wine is clean and vibrant lemon-green in colour, with typical Albariño aromas of grapefruit and fennel on the nose with a subtle background of apple and lemon. The palate is rich yet fresh with mineral notes and tropical fruits such as lychees followed by a touch of saltines and eucalyptus finishing with an excellent acidity and a fine complexity.

The quality of this wine has been cemented by a recent score of 95 points in the Decanter world wine awards.

Wine: Gamay Domaine Haut Bourg, Loire Valley, France, 2014

Tasting Notes: The wine has a very pretty colour leading one to a juicy, rounded palate that balances drinkability with interest.  Very cool climate in situation and feel, this is a terrific summer wine.

Traversing the Salt Marsh

Wine: Nebbiolo Langhe Pugnane, Piedmont, Italy, 2013

Tasting Notes: an elegant, baby Barolo. Ruby red, delicate and at times transparent. Intense expressive aromas of violets, withered roses layered over small red berry notes. Silky tannins envelop the palate with personality and vivacious energy.
